Serves:

Ingredients

  • 4 cups of diced potatoes
  • 2 cups of sliced mushrooms
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of dried thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the diced potatoes and cook for about 10 minutes, until they start to brown and become crispy.

  3. Push the potatoes to one side of the skillet and add the diced onion and minced garlic to the other side. Cook for 2-3 minutes, until the onions are translucent.

  4. Add the sliced mushrooms to the skillet and cook for another 5 minutes, until they are soft and starting to brown.

  5. Stir in the smoked paprika, dried thyme, salt, and pepper. Cook for an additional 2 minutes to allow the flavors to meld together.

  6. Remove from heat and garnish with fresh parsley before serving.
