Ingredients

  • 8 oz penne pasta
  • 2 bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup tomato sauce
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the onions and peppers and cook until they start to soften, about 5 minutes.

  3. Add the minced garlic and cook for an additional 1 minute.

  4. Stir in the tomato sauce, dried oregano, red pepper flakes, salt, and pepper. Cook for another 5 minutes.

  5. Add the cooked penne pasta to the skillet and toss to coat it with the sauce.

  6. Serve the penne pasta with grated Parmesan cheese on top.
