  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 2 cups pumpkin, peeled and cubed
  • 1 can chickpeas, rinsed and drained
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot or skillet over medium heat. Add the onions and sauté until they become translucent.

  2. Add the garlic and ginger to the pot and cook for another minute.

  3. Sprinkle in the cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Stir well to coat the onions, garlic, and ginger with the spices.

  4. Add the pumpkin cubes to the pot and cook for about 5 minutes, until they start to soften.

  5. Stir in the chickpeas, vegetable broth, and coconut milk. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the pumpkin is tender.

  6. Season with salt to taste. If desired, use a potato masher or immersion blender to partially mash the pumpkin and thicken the curry.

  7. Serve the pumpkin curry over rice or with naan bread. Garnish with fresh cilantro.
