Ingredients

  • 4 slices of bread
  • 1 cup canned chickpeas, drained
  • 1 small beetroot, cooked and peeled
  • 2 cloves of garlic
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1/4 teaspoon cumin
  • Salt and pepper, to taste
  • 1/4 cup pitted Kalamata olives, sliced
  • Fresh mint leaves, for garnish

Instructions

  1. Toast the bread slices until they are golden and crispy.

  2. In a food processor, combine the chickpeas, beetroot, garlic, tahini, lemon juice, cumin, salt, and pepper. Blend until smooth and creamy.

  3. Spread a generous amount of beetroot hummus on each toast.

  4. Top the toasts with sliced olives and garnish with fresh mint leaves.

  5. Serve immediately and enjoy!
