How To Make Sweet Potato, Spinach & Feta Tortilla

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 cups fresh spinach, chopped
- 4 large eggs, beaten
- 1/2 cup crumbled feta cheese
- Salt and pepper, to taste
Instructions

In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes and cook until they are tender, about 10 minutes.

Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 5 minutes.

Stir in the chopped spinach and cook until wilted, about 2 minutes.

Pour the beaten eggs over the mixture in the skillet and cook until the eggs are set, about 5 minutes.

Sprinkle the crumbled feta cheese on top and season with salt and pepper to taste.

Carefully flip the tortilla in the pan or transfer to a plate and flip it back into the pan to cook the other side for an additional 5 minutes.

Once cooked through, remove from the pan and let it cool slightly before slicing into wedges.
