Ingredients

  • 2 medium sweet potatoes, peeled and grated
  • 2 cups fresh spinach, chopped
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 6 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, mix together the grated sweet potatoes, chopped spinach, diced onion, minced garlic, eggs, salt, and black pepper.

  3. Heat olive oil in a non-stick skillet over medium heat.

  4. Pour the sweet potato mixture into the skillet and spread evenly, using a spatula to smooth the top.

  5. Cook for about 10 minutes, until the bottom is golden brown.

  6. Transfer the skillet to the preheated oven and bake for another 15 minutes, until the top is set and slightly golden.

  7. Remove from the oven and let cool for a few minutes before slicing into wedges.

  8. Serve warm and enjoy!
