Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 4 large sweet potatoes, peeled and diced
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.

  3. Add the onion, garlic, carrot, and peas to the skillet. Cook until vegetables are tender.

  4. Stir in the beef broth, tomato paste, and Worcestershire sauce. Simmer for 5 minutes.

  5. Meanwhile, boil the sweet potatoes in a separate pot until tender. Drain and mash with milk and butter until smooth. Season with salt and pepper.

  6. Transfer the beef and vegetable mixture to a 9×9 inch baking dish. Spread the mashed sweet potatoes over the top.

  7. Bake in the preheated oven for 20 minutes, or until the sweet potatoes are golden brown.

  8. Serve hot and enjoy!
