Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 tbsp butter
  • 1/4 cup milk
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef or lamb
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp tomato paste
  • 1/2 cup beef or chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)

Instructions

  1. Preheat oven to 375°F.

  2. Place sweet potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and mash with butter and milk.

  3. In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and cook until softened, about 5 minutes.

  4. Add ground meat, salt, pepper, and paprika. Cook until browned, breaking up any clumps.

  5. Stir in tomato paste and broth, and simmer for 5 minutes.

  6. Mix in frozen vegetables.

  7. Spread meat mixture into a 9×9 inch baking dish. Spread sweet potato mixture on top.

  8. Bake for 15-20 minutes, until top is lightly browned.
