  • 8 cups mixed salad greens
  • 1 cup sliced cherry tomatoes
  • 1 cup cucumber, diced
  • 1 cup fresh corn kernels
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, corn, red onion, basil, mint, feta cheese, and sliced almonds.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.
