How To Make Spiced Pepper & Corn Soup

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust according to your preference)
- 4 cups vegetable broth
- 2 cups frozen corn kernels
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent.

Add the diced red and green bell peppers, and cook for another 3-4 minutes until they become slightly soft.

Stir in the ground cumin, paprika, and cayenne pepper. Cook for another minute to toast the spices and enhance their flavors.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low and let it simmer for 10 minutes.

Add the frozen corn kernels and simmer for another 5 minutes until the corn is cooked through.

Season with salt and pepper to taste.

Using an immersion blender or a countertop blender, blend the soup until smooth and creamy.

Serve hot, garnished with fresh cilantro.
