Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapenos

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.

  2. Stir in smoked paprika, cumin, and chili powder. Cook for another minute.

  3. Add black beans, diced tomatoes, and vegetable broth to the pot. Bring to a simmer and let cook for 20 minutes.

  4. Season with salt and pepper to taste.

  5. Serve hot with optional toppings.
