- 2 cucumbers, thinly sliced

- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- 2 tablespoons chopped fresh cilantro
Instructions

In a large bowl, combine rice vinegar, soy sauce, sesame oil, honey, minced garlic, grated ginger, red pepper flakes, salt, and pepper. Whisk until well combined.

Add the sliced cucumbers to the bowl and toss to evenly coat them with the marinade.

Let the cucumbers marinate in the refrigerator for at least 30 minutes or up to 2 hours, stirring occasionally.
