Serves:

Ingredients

  • 1 cauliflower, cut into florets
  • 2 potatoes, peeled and cubed
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan and add chopped onions. Sauté until golden brown.

  2. Add ginger-garlic paste and cook for a minute.

  3. Add tomato puree and cook until the oil separates.

  4. Add turmeric powder, red chili powder, and salt. Mix well.

  5. Add cauliflower florets and cubed potatoes to the pan. Mix gently to coat them with the spice mixture.

  6. Cover the pan and cook on low heat for about 15-20 minutes or until the vegetables are cooked through.

  7. Sprinkle garam masala and mix well. Cook for another 2 minutes.

  8. Garnish with fresh cilantro.

  9. Serve hot with roti or rice.
