Serves:

Ingredients

  • 2 sweet potatoes, peeled and cubed
  • 1 head of cauliflower, cut into florets
  • 1 cup of green lentils
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups of baby spinach
  • 1 avocado, sliced
  • 1/4 cup of chopped fresh cilantro
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, toss the sweet potatoes and cauliflower with olive oil, cumin, paprika, salt, and pepper.

  3. Spread the sweet potatoes and cauliflower on a baking sheet and roast for 25-30 minutes, or until they are tender and slightly crispy.

  4. While the vegetables are roasting, cook the lentils according to package instructions.

  5. In a large bowl, combine the roasted sweet potatoes, cauliflower, lentils, baby spinach, avocado, cilantro, and lemon juice.

  6. Toss everything together until well combined.

  7. Serve the sweet potato and cauliflower lentil bowl warm or at room temperature.
