  • 4 large potatoes, peeled
  • 1 onion, finely chopped
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil, for frying

Instructions

  1. Grate the potatoes using a box grater and squeeze out excess moisture using a clean kitchen towel.

  2. In a large bowl, mix together the grated potatoes, chopped onion, eggs, flour, salt, and black pepper.

  3. Heat vegetable oil in a non-stick skillet over medium heat.

  4. Drop spoonfuls of the potato mixture into the hot oil, pressing them gently to flatten.

  5. Cook for 3-4 minutes on each side, until the pancakes are golden brown and crispy.

  6. Remove the pancakes from the skillet and drain on paper towels to remove excess oil.

  7. Serve the potato pancakes hot with sour cream or applesauce.
