Ingredients

  • 6 eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cups cooked potatoes, diced
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped

Instructions

  1. In a large bowl, whisk together eggs, salt, and black pepper.

  2. Heat olive oil in a skillet over medium heat. Add diced onion and red bell pepper, cook until softened.

  3. Add cooked potatoes to the skillet and cook for another 5 minutes until lightly browned.

  4. Pour the whisked eggs over the cooked vegetables and stir gently.

  5. Sprinkle shredded cheddar cheese and chopped green onions over the egg mixture.

  6. Cover the skillet and cook for about 10 minutes, or until the eggs are set.

  7. Remove from heat and let it cool slightly before cutting into slices.

  8. Serve the picnic tortilla warm or at room temperature.
