How To Make Pea Hummus

Serves:

Ingredients

  • 2 cups fresh or frozen peas
  • 1 clove garlic, minced
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: chopped fresh herbs, olive oil, or a sprinkle of paprika

Instructions

  1. If using fresh peas, blanch them in boiling water for 2 minutes, then transfer to an ice bath to cool. If using frozen peas, thaw them according to package instructions.

  2. In a food processor, combine the peas, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth and creamy, adding a splash of water if needed to achieve desired consistency.

  3. Taste and adjust seasonings as desired.

  4. Transfer the pea hummus to a serving bowl and top with your choice of optional toppings.

  5. Serve with pita bread, fresh vegetables, or your favorite dippers.
