How To Make Parsnip, Feta & Butter Bean Pie

Ingredients
- 300g parsnips, peeled and diced
- 200g feta cheese, crumbled
- 400g butter beans, drained and rinsed
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 250g puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 180°C (350°F).

In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.

Add the parsnips and cook for another 5 minutes until slightly golden.

Stir in the butter beans, dried thyme, dried rosemary, salt, and pepper. Cook for another 2 minutes.

Remove from heat and let cool slightly. Stir in the crumbled feta cheese.

Roll out the puff pastry on a floured surface to fit a 9-inch pie dish. Spoon the parsnip and feta mixture into the pie dish.

Cover the pie with the rolled-out puff pastry, pressing the edges to seal. Brush the pastry with the beaten egg to give it a golden color.

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and crispy.

Remove from the oven and let cool for a few minutes before serving.
