How To Make Salad Lyonnaise

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 8 slices of bacon
  • 4 large eggs
  • 1 head of frisée lettuce
  • 1 shallot, thinly sliced
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove from the skillet and set aside.

  2. In the same skillet, fry the eggs sunny-side up until the whites are set but the yolks are still runny.

  3. While the eggs are cooking, whisk together the shallot, red wine vinegar, Dijon mustard, honey, salt, and pepper in a small bowl.

  4. In a large salad bowl, combine the frisée lettuce and crumbled bacon. Toss with the vinaigrette until well coated.

  5. Divide the salad onto four plates and top each with a fried egg. Serve immediately.
