Serves:

Ingredients

  • 4 bell peppers
  • 1 cup mushrooms, chopped
  • 1/2 cup walnuts, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut the tops off the bell peppers and remove the seeds and membranes.

  3. In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.

  4. Add mushrooms and sauté until tender, about 5 minutes.

  5. Stir in walnuts, cherry tomatoes, dried basil, salt, and pepper. Cook for another 2 minutes.

  6. Spoon the mushroom and walnut mixture into the bell peppers.

  7. Place the stuffed peppers in a baking dish and sprinkle with Parmesan cheese.

  8. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the cheese is melted and golden.

  9. Remove from the oven and let cool for a few minutes before serving.
