How To Make Mushroom, Shallot & Squash Pie

Ingredients
- 1 sheet of pre-made pie crust
- 1 cup of sliced mushrooms
- 1 cup of diced shallots
- 1 cup of diced squash
- 2 cloves of garlic, minced
- 1 tbsp of olive oil
- 1 tsp of thyme
- Salt and pepper to taste
- 1/2 cup of shredded cheese (optional)
- 1 beaten egg (for egg wash)
Instructions

Preheat the oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.

Add mushrooms, shallots, and squash to the skillet. Cook until vegetables are tender.

Season with thyme, salt, and pepper. Stir well to combine.

Roll out the pie crust and line a pie dish with it. Trim any excess dough.

Pour the mushroom, shallot, and squash mixture into the pie crust. Spread evenly.

If desired, sprinkle shredded cheese over the filling.

Roll out the second pie crust and place it on top of the filling. Seal and crimp the edges.

Brush the beaten egg over the top crust for a shiny finish.

Cut a few slits on the top crust to vent.

Bake in the preheated oven for 40-50 minutes, or until the crust is golden brown.

Allow the pie to cool for a few minutes before slicing and serving.
