Serves:
Ingredients
- 1 medium butternut squash
- 1 cup of sugar
- 1 tsp of cinnamon
- 1/2 tsp of nutmeg
- 1/4 tsp of ginger
- 1/4 tsp of salt
- 2 eggs
- 1 cup of evaporated milk
- 1 prepared pie crust
Instructions
-
Preheat the oven to 400°F (200°C).
-
Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves cut side down on a baking sheet lined with parchment paper. Roast in the oven for about 45 minutes, or until the flesh is very tender. Remove from the oven and let cool.
-
Scoop the cooked butternut squash flesh into a mixing bowl. Add the sugar, cinnamon, nutmeg, ginger, and salt. Mix well.
-
In a separate bowl, whisk the eggs and evaporated milk together. Add the egg mixture to the butternut squash mixture and stir until well combined.
-
Pour the filling into the prepared pie crust and smooth the top with a spatula.
-
Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (180°C) and continue baking for an additional 35-40 minutes, or until the filling is set and the crust is golden brown.
-
Remove from the oven and let cool before serving. Enjoy!
