Serves:

Ingredients

  • 4 slices of bread
  • 1 cup of chickpeas, drained and rinsed
  • 1/4 cup of pesto
  • 4 slices of mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Toast the bread slices until golden and crispy.

  3. In a small bowl, mix the chickpeas with the pesto until well coated.

  4. Place a slice of mozzarella cheese on each toast and spread the chickpea mixture on top.

  5. Place the toasts on a baking sheet and bake for 5-7 minutes, or until the cheese is melted and bubbly.

  6. Remove from the oven and garnish with fresh basil leaves.

  7. Serve hot and enjoy!
