Ingredients

  • 1 block of firm tofu, cut into cubes
  • 2 sweet potatoes, peeled and cut into chunks
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 2 cloves of garlic, minced
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, whisk together the miso paste, soy sauce, maple syrup, sesame oil, rice vinegar, grated ginger, and minced garlic.

  3. Place the tofu and sweet potato chunks on a baking sheet and pour the miso marinade over them, tossing to coat evenly.

  4. Roast in the preheated oven for 25-30 minutes, or until the tofu and sweet potatoes are golden brown and crispy.

  5. Sprinkle with sesame seeds and sliced green onions before serving.
