How To Make Miso Roasted Tofu with Sweet Potato

Ingredients
- 1 block of firm tofu, cut into cubes
- 2 sweet potatoes, peeled and cut into chunks
- 2 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 2 cloves of garlic, minced
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a bowl, whisk together the miso paste, soy sauce, maple syrup, sesame oil, rice vinegar, grated ginger, and minced garlic.

Place the tofu and sweet potato chunks on a baking sheet and pour the miso marinade over them, tossing to coat evenly.

Roast in the preheated oven for 25-30 minutes, or until the tofu and sweet potatoes are golden brown and crispy.

Sprinkle with sesame seeds and sliced green onions before serving.
