Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, chopped green onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.

  2. Add bell pepper and tomatoes, and cook for another 5 minutes.

  3. Add black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper to the pot. Stir well.

  4. Bring the mixture to a boil, then reduce heat to low and let it simmer for 20-25 minutes, until the flavors have melded together and the chili has thickened.

  5. Serve hot, with optional toppings if desired.
