How To Make Mediterranean-style Bean Salad

Ingredients
- 2 cans of red kidney beans, rinsed and drained
- 1 can of chickpeas, rinsed and drained
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, finely chopped
- 1/4 cup of Kalamata olives, pitted and sliced
- 1/4 cup of feta cheese, crumbled
- 2 tablespoons of fresh parsley, chopped
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of extra virgin olive oil
- Salt and black pepper to taste
Instructions

In a large bowl, combine the kidney beans, chickpeas, cherry tomatoes, red onion, Kalamata olives, feta cheese, and parsley.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the bean mixture and toss gently to combine.
