Ingredients

  • 2 cans of red kidney beans, rinsed and drained
  • 1 can of chickpeas, rinsed and drained
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of Kalamata olives, pitted and sliced
  • 1/4 cup of feta cheese, crumbled
  • 2 tablespoons of fresh parsley, chopped
  • 2 tablespoons of fresh lemon juice
  • 2 tablespoons of extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the kidney beans, chickpeas, cherry tomatoes, red onion, Kalamata olives, feta cheese, and parsley.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

  3. Pour the dressing over the bean mixture and toss gently to combine.

  4. Serve immediately or refrigerate for a few hours to allow the flavors to blend.
