How To Make Lighter Cauliflower Cheese

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 cup low-fat milk
  • 1 cup reduced-fat cheddar cheese, grated
  • 2 tbsp whole wheat flour
  • 2 tbsp butter
  • 1/4 tsp nutmeg
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Steam or boil the cauliflower florets until they are tender but firm. Drain and set aside.

  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

  4. Slowly whisk in the milk and continue to cook until the mixture thickens.

  5. Remove the saucepan from the heat and stir in the grated cheese, nutmeg, salt, and pepper.

  6. Place the cauliflower in a baking dish and pour the cheese sauce over it.

  7. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown on top.

  8. Serve hot and enjoy!
