How To Make Lentil Bolognese Soup

Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- ¼ cup grated Parmesan cheese, for garnish
- Fresh basil leaves, for garnish
Instructions

Rinse the lentils under cold water and set aside.

Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and garlic, and cook until softened.

Stir in the diced tomatoes, lentils, vegetable broth, dried basil, dried oregano, salt, and pepper.

Bring the soup to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.

Serve the soup hot, garnished with grated Parmesan cheese and fresh basil leaves.
