Ingredients

  • 2 leeks, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 2 tablespoons grated coconut
  • Salt to taste
  • Juice of half a lime

Instructions

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.

  2. Add the sliced leeks to the pan and sauté for 5-7 minutes, until they soften and start to brown.

  3. Stir in turmeric powder, chili powder, and grated coconut. Mix well.

  4. Cook for another 3-4 minutes, until the flavors are well combined.

  5. Season with salt to taste and squeeze in lime juice. Mix well.

  6. Remove from heat and serve hot as a side dish with rice or flatbread.
