Serves:

Ingredients

  • 2 cups of diced mixed vegetables (carrots, peas, bell peppers, mushrooms)
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 can of diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups of mashed potatoes

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  3. Add the mixed vegetables to the skillet and cook for 5 minutes, until slightly tender.

  4. Stir in the diced tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes, until the flavors are well combined.

  5. Transfer the vegetable mixture to a baking dish. Spread the mashed potatoes evenly over the top.

  6. Bake for 25 minutes, until the mashed potatoes are golden and the filling is bubbly.

  7. Serve hot and enjoy!
