Ingredients

  • 1 cup lentils, rinsed and drained
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion, carrots, celery, and garlic until softened.

  2. Add the cumin powder, paprika, and turmeric. Stir well to coat the vegetables.

  3. Add the lentils, vegetable broth, and diced tomatoes to the pot. Season with salt and pepper.

  4. Bring the mixture to a boil, then reduce the heat and simmer for about 30-40 minutes or until the lentils are tender.

  5. Serve hot, garnished with fresh parsley.
