How To Make Green Minestrone with Tortellini

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- salt and pepper to taste
- 8 oz tortellini (fresh or frozen)
- 4 cups spinach
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until they start to soften, about 5 minutes.

Add carrots, celery, zucchini, and green beans to the pot. Cook for another 5 minutes, stirring occasionally.

Pour in vegetable broth and diced tomatoes. Add dried oregano, dried basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.

While the soup is simmering, cook the tortellini according to package instructions. Drain and set aside.

Add spinach to the pot and cook for an additional 2 minutes until wilted.

To serve, divide the cooked tortellini into bowls and ladle the green minestrone soup over it.
