How To Make Garden Carrot Cake

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large mixing bowl, beat together the eggs, oil, brown sugar, and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the grated carrots, raisins, and chopped walnuts.
