Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 small butternut squash, peeled and cubed
  • 1 cup pitted prunes
  • 1 cup pomegranate arils
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, cook the onion and garlic until softened.

  2. Add the butternut squash and cook for 5 minutes.

  3. Stir in the quinoa, vegetable broth, prunes, cumin, turmeric, paprika, salt, and pepper.

  4. Bring to a simmer and cook for 20 minutes or until the quinoa and squash are tender.

  5. Stir in the pomegranate arils and cook for an additional 5 minutes.

  6. Serve the stew hot, garnished with fresh cilantro.
