How To Make Easy Vegetarian Chilli

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 tbsp chilli powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup vegetable broth
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until onion is translucent, about 5 minutes.

  2. Add diced red bell pepper, diced green bell pepper, and minced jalapeno pepper to the pot. Cook for an additional 5 minutes, until vegetables are tender.

  3. Stir in chilli powder, cumin, and paprika. Cook for 1 minute to toast the spices.

  4. Add diced tomatoes, kidney beans, black beans, corn, and vegetable broth to the pot. Season with salt and pepper to taste. Bring to a simmer and let cook for 20 minutes, stirring occasionally.

  5. Serve hot, garnished with desired toppings such as shredded cheese, sour cream, and chopped cilantro.
