Ingredients

  • 4 slices of sourdough bread
  • 1 can of beans (black, kidney, or cannellini), drained and rinsed
  • 150g feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Toast the sourdough bread slices until golden and crispy.

  3. In a skillet, heat the olive oil over medium heat.

  4. Add the minced garlic and sauté for 1 minute until fragrant.

  5. Add the beans, dried oregano, salt, and pepper to the skillet. Cook for 5-7 minutes until heated through.

  6. Mash the beans slightly with a fork or potato masher to create a chunky texture.

  7. Spread the bean mixture evenly on the toasted sourdough slices.

  8. Sprinkle crumbled feta cheese on top of each slice.

  9. Place the prepared toasts on a baking sheet and bake for 5 minutes until the feta cheese softens.

  10. Remove from the oven and garnish with fresh parsley.

  11. Serve hot and enjoy!
