How To Make Beans & Feta on Sourdough Toast

Ingredients
- 4 slices of sourdough bread
- 1 can of beans (black, kidney, or cannellini), drained and rinsed
- 150g feta cheese, crumbled
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 375°F (190°C).

Toast the sourdough bread slices until golden and crispy.

In a skillet, heat the olive oil over medium heat.

Add the minced garlic and sauté for 1 minute until fragrant.

Add the beans, dried oregano, salt, and pepper to the skillet. Cook for 5-7 minutes until heated through.

Mash the beans slightly with a fork or potato masher to create a chunky texture.

Spread the bean mixture evenly on the toasted sourdough slices.

Sprinkle crumbled feta cheese on top of each slice.

Place the prepared toasts on a baking sheet and bake for 5 minutes until the feta cheese softens.

Remove from the oven and garnish with fresh parsley.
