Ingredients

  • 8 ounces of spaghetti
  • 2 tablespoons of olive oil
  • 1 pound of mushrooms, sliced
  • 4 cloves of garlic, minced
  • 1 cup of vegetable broth
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the mushrooms and cook until they release their moisture and start to brown.

  3. Add the garlic and cook for another minute.

  4. Pour in the vegetable broth and let it simmer for 5 minutes.

  5. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper.

  6. Add the cooked spaghetti to the skillet and toss until well coated with the sauce.

  7. Serve hot and garnish with fresh parsley.
