How To Make Courgette & Tomato Soup

Ingredients

  • 2 courgettes, diced
  • 4 tomatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat the olive oil in a large soup pot over medium heat.

  2. Add the onion and garlic, and cook until softened.

  3. Add the courgettes and tomatoes, and cook for 5 minutes.

  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.

  5. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender and blend until smooth.

  6. Season with salt and pepper to taste.

  7. Serve hot, garnished with fresh basil leaves.
