How To Make Courgette & Tahini Dip

Ingredients
- 2 courgettes, grated
- 2 garlic cloves, minced
- 1/4 cup tahini
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp ground cumin
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a small bowl, mix together the tahini, lemon juice, olive oil, ground cumin, salt, and pepper until well combined.

Heat olive oil in a pan over medium heat, then add the grated courgettes and minced garlic. Cook for about 8-10 minutes, until softened and slightly browned.

Remove the courgettes from the heat and let them cool for a few minutes.

In a food processor, blend the courgettes and garlic until smooth.

Add the tahini mixture to the food processor and blend until well combined.

Transfer the dip to a serving bowl and garnish with fresh parsley.

Serve with pita bread, crackers, or your favorite vegetables.
