How To Make Courgette & Tahini Dip

Ingredients

  • 2 courgettes, grated
  • 2 garlic cloves, minced
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a small bowl, mix together the tahini, lemon juice, olive oil, ground cumin, salt, and pepper until well combined.

  2. Heat olive oil in a pan over medium heat, then add the grated courgettes and minced garlic. Cook for about 8-10 minutes, until softened and slightly browned.

  3. Remove the courgettes from the heat and let them cool for a few minutes.

  4. In a food processor, blend the courgettes and garlic until smooth.

  5. Add the tahini mixture to the food processor and blend until well combined.

  6. Transfer the dip to a serving bowl and garnish with fresh parsley.

  7. Serve with pita bread, crackers, or your favorite vegetables.
