Ingredients

  • 4 flatbreads
  • 2 medium red onions, sliced
  • 2 tablespoons olive oil
  • 8 ounces feta cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill or a grill pan over medium heat.

  2. Brush the sliced onions with olive oil and grill for about 10 minutes, until softened and slightly charred. Set aside.

  3. In a mixing bowl, combine the feta cheese, Greek yogurt, lemon juice, and black pepper. Using an electric mixer, whip the mixture until smooth and fluffy.

  4. Preheat your oven to 400°F (200°C).

  5. Place the flatbreads on a baking sheet and spread a generous amount of the whipped feta onto each one.

  6. Top the flatbreads with the grilled onions.

  7. Bake in the preheated oven for about 10 minutes, until the flatbreads are crisp and golden brown.

  8. Remove from the oven, garnish with fresh parsley, and serve hot.
