Ingredients

  • 4 stalks of celery
  • 1 cup of blue cheese, crumbled
  • 1 cup of walnuts, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper, to taste

Instructions

  1. Wash and trim the celery stalks, then use a vegetable peeler to create thin “strings” from each stalk. Place in a large bowl.

  2. Add the blue cheese and walnuts to the bowl with the celery.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss to combine.

  4. Serve immediately and enjoy!
