How To Make Celeriac Ribbons Tossed with Chard, Garlic & Pumpkin Seeds

Ingredients
- 1 large celeriac, peeled
- 1 bunch chard, stems removed and leaves chopped
- 2 cloves of garlic, minced
- 1/4 cup pumpkin seeds
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

Using a mandoline or a sharp knife, slice the celeriac into thin ribbons.

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute.

Add the chard leaves to the skillet and sauté until wilted, about 2-3 minutes.

Add the celeriac ribbons to the skillet and toss to combine. Cook for an additional 2-3 minutes until the celeriac is slightly softened.

Remove from heat and sprinkle with pumpkin seeds. Season with salt and pepper to taste.

Serve the celeriac ribbons warm as a side dish or as a light lunch.
