Ingredients

  • 1 large celeriac, peeled
  • 1 bunch chard, stems removed and leaves chopped
  • 2 cloves of garlic, minced
  • 1/4 cup pumpkin seeds
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Using a mandoline or a sharp knife, slice the celeriac into thin ribbons.

  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute.

  3. Add the chard leaves to the skillet and sauté until wilted, about 2-3 minutes.

  4. Add the celeriac ribbons to the skillet and toss to combine. Cook for an additional 2-3 minutes until the celeriac is slightly softened.

  5. Remove from heat and sprinkle with pumpkin seeds. Season with salt and pepper to taste.

  6. Serve the celeriac ribbons warm as a side dish or as a light lunch.
