How To Make Cabbage Roll Enchiladas

Ingredients

  • 8 large cabbage leaves
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • Chopped fresh cilantro, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Bring a pot of water to a boil. Add the cabbage leaves and cook for 3-4 minutes, until slightly softened. Drain and set aside.

  3. In a large skillet, brown the ground beef over medium heat. Add the onion, garlic, cumin, chili powder, salt, and pepper. Cook until the onion is softened and the beef is fully cooked.

  4. Place a spoonful of the beef mixture onto each cabbage leaf. Roll them up and place them seam side down in a greased baking dish.

  5. Pour the enchilada sauce over the cabbage rolls and sprinkle with shredded cheese.

  6. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.

  7. Garnish with fresh cilantro before serving.
