How To Make Bois Boudin

Ingredients
- 1 cup red wine
- 1 cup red wine vinegar
- 1 cup chicken or beef stock
- 1 shallot, minced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 bay leaf
- 2 sprigs of thyme
- Salt and pepper to taste
Instructions

In a saucepan, combine the red wine, red wine vinegar, and chicken or beef stock. Bring to a simmer over medium heat.

Add the minced shallot, garlic, tomato paste, Dijon mustard, honey, bay leaf, and thyme to the saucepan. Stir to combine.

Simmer the sauce over low heat for 30 minutes, stirring occasionally.

After 30 minutes, remove the bay leaf and thyme sprigs from the sauce. Use an immersion blender or transfer the sauce to a blender to puree until smooth.

Return the sauce to the saucepan and simmer for an additional 15 minutes to thicken slightly. Season with salt and pepper to taste.

Remove from heat and let the Bois Boudin sauce cool slightly before serving.
