Ingredients

  • 1 lb boudin sausage, casing removed
  • 1 cup bread crumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, combine the boudin sausage and bread crumbs. Mix well until fully combined.

  2. Roll the mixture into small balls, about 1 inch in diameter.

  3. Place the flour, beaten eggs, and bread crumbs in separate bowls.

  4. Roll each boudin ball in flour, dip it in the beaten eggs, and then roll it in bread crumbs until fully coated.

  5. In a large skillet, heat vegetable oil over medium-high heat. Add the boudin balls and fry until golden brown, about 5-7 minutes.

  6. Remove the boudin balls from the skillet and drain them on paper towels to remove excess oil.

  7. Serve hot with your favorite dipping sauce.
