Ingredients
- 1 lb ground pork
- 1 cup cooked rice
- 1/2 cup chopped onions
- 1/4 cup chopped bell peppers
- 1/4 cup chopped celery
- 2 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon thyme
- 4 feet hog casings (soaked in water)
Instructions

In a large mixing bowl, combine ground pork, cooked rice, onions, bell peppers, celery, garlic, Cajun seasoning, salt, black pepper, cayenne pepper, and thyme. Mix well until all ingredients are evenly distributed.

Rinse hog casings and place them in a bowl of water to soak for 30 minutes.

Prepare a sausage stuffer or piping bag fitted with a large round tip.

Stuff the pork and rice mixture into the hog casings, forming sausages about 6 inches long. Twist the casings at regular intervals to create individual sausages.

In a large pot, bring water to a boil. Add the sausages and cook for 45 minutes.

Remove the sausages from the pot and let them cool slightly before serving.
