How To Make Sea Veg with Duck Egg on Sourdough

Ingredients
- 4 duck eggs
- 4 slices of sourdough bread
- 1 cup mixed sea vegetables (such as nori, dulse, and wakame)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

Bring a pot of water to a boil and blanch the sea vegetables for 1 minute. Drain and set aside.

Toast the sourdough bread slices until golden brown.

In a non-stick pan, heat the olive oil over medium heat. Crack the duck eggs into the pan and cook until the whites are set but the yolks are still runny.

Season the eggs with salt and pepper.

To serve, place a slice of toasted sourdough bread on each plate. Top with a handful of blanched sea vegetables and a cooked duck egg.

Garnish with additional sea vegetables, if desired.
