How To Make Aubergine Timbales with Goat’s Cheese

Ingredients
- 2 large aubergines, sliced lengthwise into 1/2 inch thick slices
- 200g goat’s cheese, crumbled
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Place the aubergine slices on a baking sheet and brush both sides with olive oil.

Roast in the oven for 15 minutes, or until softened and slightly golden.

In a bowl, mix the goat’s cheese, garlic, dried oregano, salt, and pepper.

Lay a slice of roasted aubergine on a clean surface and spoon a dollop of the cheese mixture onto one end. Roll up tightly.

Repeat with the remaining aubergine slices and cheese mixture.

Place the rolled aubergine timbales in a baking dish and bake for another 15-20 minutes, until the cheese is melted and bubbly.

Serve hot, garnished with fresh basil leaves.
