Ingredients

  • 2 large aubergines, sliced lengthwise into 1/2 inch thick slices
  • 200g goat’s cheese, crumbled
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the aubergine slices on a baking sheet and brush both sides with olive oil.

  3. Roast in the oven for 15 minutes, or until softened and slightly golden.

  4. In a bowl, mix the goat’s cheese, garlic, dried oregano, salt, and pepper.

  5. Lay a slice of roasted aubergine on a clean surface and spoon a dollop of the cheese mixture onto one end. Roll up tightly.

  6. Repeat with the remaining aubergine slices and cheese mixture.

  7. Place the rolled aubergine timbales in a baking dish and bake for another 15-20 minutes, until the cheese is melted and bubbly.

  8. Serve hot, garnished with fresh basil leaves.
