How To Make Almond, Orange & Ginger Pesach Mandelbrot

Ingredients
- 1 cup almond flour
- 1/4 cup potato starch
- 1/4 cup coconut sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup chopped almonds
- 1/4 cup chopped dried cranberries
- 1 tablespoon grated orange zest
- 1 teaspoon grated fresh ginger
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 2 eggs, beaten
Instructions

Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a large bowl, combine the almond flour, potato starch, coconut sugar, baking soda, and salt.

Stir in the chopped almonds, dried cranberries, orange zest, and ginger.

In a separate small bowl, whisk together the honey, vanilla extract, and beaten eggs.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Form the mixture into a log shape on the prepared baking sheet.

Bake for 30-35 minutes or until golden brown and firm to the touch.

Remove from the oven and let cool for 10 minutes.

Using a sharp knife, slice the log into 1-inch thick slices.

Place the slices back on the baking sheet and bake for an additional 10 minutes, flipping halfway through, until crispy.
