Ingredients

  • 1 cup almond flour
  • 1/4 cup potato starch
  • 1/4 cup coconut sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped almonds
  • 1/4 cup chopped dried cranberries
  • 1 tablespoon grated orange zest
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the almond flour, potato starch, coconut sugar, baking soda, and salt.

  3. Stir in the chopped almonds, dried cranberries, orange zest, and ginger.

  4. In a separate small bowl, whisk together the honey, vanilla extract, and beaten eggs.

  5. Pour the wet ingredients into the dry ingredients and mix until well combined.

  6. Form the mixture into a log shape on the prepared baking sheet.

  7. Bake for 30-35 minutes or until golden brown and firm to the touch.

  8. Remove from the oven and let cool for 10 minutes.

  9. Using a sharp knife, slice the log into 1-inch thick slices.

  10. Place the slices back on the baking sheet and bake for an additional 10 minutes, flipping halfway through, until crispy.

  11. Allow to cool completely before serving.
