Ingredients

  • 8 oz wholewheat spaghetti
  • 2 ripe avocados
  • 1/4 cup fresh basil leaves
  • 2 cloves of garlic
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook the wholewheat spaghetti according to package instructions. Drain and set aside.

  2. In a blender, combine the avocados, basil, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy.

  3. In a large skillet, heat the avocado sauce over medium heat. Add the cooked spaghetti and toss well to coat.

  4. Cook for an additional 2-3 minutes, until heated through.

  5. Serve the wholewheat spaghetti with avocado sauce hot, garnished with grated Parmesan cheese, if desired.
